After slicing and tossing your potatoes in olive oil and seasonings, the air fryer does the rest of the heavy lifting, cooking the potatoes to pure golden brown, crispy, creamy, flavorful perfection. Plus, you can customize the flavor to fit the meal you’re making, whether breakfast, dinner, or “brinner” (breakfast for dinner 😉).

Ingredients you’ll need
- Russet potatoes. Their starchy texture results in a crispy exterior and fluffy interior. Yukon Gold potatoes also work, but the edges might not get as crispy as Russets.
- Olive oil. To coat the potato slices, ensuring they crisp up beautifully. If you don’t have olive oil, substitute an oil with a high smoke point that can handle air frying, like avocado or canola oil.
- Seasoned salt. Lawry’s seasoned salt is my go-to. It has the perfect balance of savory spices. If you don’t have seasoned salt, you can mix salt, paprika, garlic powder, onion powder, and a touch of sugar.
- Black pepper. Freshly ground black pepper has the best flavor. Adjust the amount to taste.
- Olive oil cooking spray. Helps keep the potatoes from sticking to the air fryer basket and enhances crispiness.
How to cook sliced potatoes in air fryer
Step 1: Wash and slice. Give your potatoes a good wash and pat them dry. Using a mandoline slicer or a sharp knife, cut the potatoes into ¼” slices.
Step 2: Soak and dry. Soak the potato slices in a bowl of cold water for 15 minutes. Then, lay the slices out on paper towels and pat them dry thoroughly.
Step 3: Season. Toss the potato slices with olive oil, seasoned salt, and pepper in a large bowl.
Step 4: Layer in air fryer. Layer the potatoes in the air fryer basket. Overlap them a bit, but don’t stack them directly on top of each other.
Step 5: Air fry. Set your air fryer to 380°F and cook the potatoes until they reach your desired level of crispness, shaking the basket every few minutes and giving them a spritz of olive oil spray after 10 minutes. If some smaller pieces cook faster, pull them out and let the larger slices finish cooking.
Step 6: Keep warm. Once all your potatoes are perfectly cooked, set your air fryer to the “keep warm” setting until you’re ready to serve.
Recipe tips and FAQs
- I highly recommend using a mandoline slicer to achieve uniform slices and consistent results. If you don’t have a mandoline slicer, cut the potatoes with a sharp knife as evenly and thinly as possible.
- Don’t skip the water soak! This step removes excess starch so the potatoes crisp up nicely in the air fryer. After soaking, lay the slices out on paper towels and pat them as dry as possible to ensure the ultimate crispiness.
- Avoid stacking the potato slices directly on top of each other. It’s okay if they slightly overlap, but if your basket is on the smaller side, you may need to cook in two batches. Overcrowding the basket will lead to steaming and less crispy results.
- Shake the basket every 3-5 minutes to ensure the potato slices cook evenly and don’t stick together. When shaking the basket, if you notice any smaller slices look finished, remove them from the air fryer so they don’t burn.
- Spritz the potatoes with cooking spray after 10 minutes of air frying to enhance their crispiness. A light, even spray, is all you need! Too much oil can make the potatoes greasy instead of crispy.

While soaking cut potatoes in cold water isn’t absolutely necessary, it makes a big difference in the quality of your finished dish. Soaking the potatoes in cold water and drying the slices thoroughly removes excess starch, crucial for achieving crispy, golden-brown slices and preventing them from sticking together during air frying.
How long it takes to cook sliced potatoes in the air fryer can vary depending on the thickness of your slices. However, they typically take between 15 and 25 minutes at 380°F. Remember to shake the basket every few minutes and remove smaller slices earlier if they cook faster.

Make ahead and storing
Make ahead: Up to 24 hours ahead, you can wash/slice your potatoes and soak/ dry them. Store the dried slices in an airtight container in the refrigerator, and then simply toss them with olive oil and seasonings right before air frying.
Storing: Let leftover air fryer sliced potatoes cool to room temperature before placing them in an airtight container and storing them in the refrigerator for 3-4 days. When ready to reheat, pop them back into the air fryer for a quick crisp-up.
Freezing: Arrange the cooled slices in a single layer on a baking sheet and freeze until solid. Once frozen, transfer the slices to a freezer bag and keep frozen for 1-2 months. Note that they may lose some of their crispness upon thawing.

- Air Fryer *I used a Cosori 6.8 qt air fryer
Ingredients
- 1 lb Russet potatoes (about 2 large)
- 1 tbsp olive oil
- 1 ¼ tsp seasoned salt *I used Lawrys (more or less, to taste)
- ¼ tsp black pepper
- olive oil cooking spray
Instructions
- Wash the potatoes and pat dry. Using a mandoline slicer, or a sharp knife, slice the potatoes in ¼" slices.
- Soak the potato slices in a bowl of cold water for 15 minutes.
- Lay the slices out on paper towels and pat dry.
- Toss the potatoes with olive oil, seasoned salt, and pepper in a large bowl.
- Layer the potatoes in the air fryer basket (if your basket is smaller, you can do this in 2 batches), making sure to overlap them and not place them right on top of each other.
- Air fry at 380 degrees F. for 15-25 minutes (depending on your air fryer), shaking the basket every 3-5 minutes and spritzing with a little olive oil spray after 10 minutes and cook to your desired crispness (we like them soft in the middle and crispy around the edges). If some smaller pieces cook faster, just pull those out and finish cooking the larger slices. When all of the potatoes are done, you can set the air fryer to the "keep warm" setting until you're ready to serve.
