Equipment

  • Air Fryer *I used a Cosori 6.8 qt air fryer

Ingredients

  • 1 lb Russet potatoes (about 2 large)
  • 1 tbsp olive oil
  • 1 ¼ tsp seasoned salt *I used Lawrys (more or less, to taste)
  • ¼ tsp black pepper
  • olive oil cooking spray

Instructions

  • Wash the potatoes and pat dry. Using a mandoline slicer, or a sharp knife, slice the potatoes in ¼" slices.
  • Soak the potato slices in a bowl of cold water for 15 minutes.
  • Lay the slices out on paper towels and pat dry.
  • Toss the potatoes with olive oil, seasoned salt, and pepper in a large bowl.
  • Layer the potatoes in the air fryer basket (if your basket is smaller, you can do this in 2 batches), making sure to overlap them and not place them right on top of each other.
  • Air fry at 380 degrees F. for 15-25 minutes (depending on your air fryer), shaking the basket every 3-5 minutes and spritzing with a little olive oil spray after 10 minutes and cook to your desired crispness (we like them soft in the middle and crispy around the edges). If some smaller pieces cook faster, just pull those out and finish cooking the larger slices. When all of the potatoes are done, you can set the air fryer to the "keep warm" setting until you're ready to serve.
