Plant-based meals are all the rage. Even though I'm an omnivore that doesn't discriminate against any foods or food groups, I do enjoy plant-based meals in my diet. It's important to get a wide range of nutrients that our bodies crave to function at our best. Vegetarian meals can actually be high in protein and great options, even for hearty meat-eaters.
A few of my family's favorite vegetarian meals include Low-Carb Crustless Spinach Quiche, Vegetarian Stuffed Poblano Peppers, Crispy Oven-Fried Eggplant, and Easy Spinach Calzones.
