This recipe was born out of my craving for stuffed baked apples. It’s incredibly simple to make with just a few ingredients and the touch of a button on your air fryer! Plus, it’s perfect for breakfast or dessert, especially with a scoop of protein-packed Greek yogurt! If you want to add more protein, just add more yogurt! - Butter. Adds richness and a creamy texture to the baked apples. The fat helps caramelize the edges and enhance the overall flavor.
- Maple syrup. Provides natural sweetness and encourages caramelization during the cooking process. Honey, date syrup, or agave nectar work, too, with a slightly different flavor profile.
- Cinnamon. Adds that warm, cozy touch that complements apples perfectly. Don’t hesitate to experiment with other spices here, like ground cloves, allspice, nutmeg, or even apple pie spice.
- Apple cider. Keeps the apples moist and intensifies the apple flavor. If you don’t have apple cider, apple juice will do the trick. After air frying, you’ll spoon the liquid over the air-fried apples because why let all that flavor go to waste?!
- Greek yogurt. Provides a cool, creamy contrast to the warm apples. Remember, yogurt is not created equal, so opt for one with higher fat content, like 2% or 4%, for the best taste and texture.
- Chopped walnuts. Lightly toasted for nuttiness and crunch that contrasts beautifully with the soft apples. Feel free to use pecans or almonds if you prefer.

Having the right tools makes air-frying apples a failproof experience. Here’s what you’ll need:
- Air fryer – I have a Cosori brand air fryer, but any reliable air fryer with a temperature control setting will do the trick.
- Air fryer parchment liners – Select liners specifically designed for air fryers. I bought mine on Amazon: here’s the link! No need to double up –one liner is sufficient to hold the cider and ensure even baking.
- Apple corer – This gadget makes it easy to remove the core without cutting through the bottom of the apple.
How to bake apples in an air fryer
Step 1: Prep the apples. Start by washing the apples and patting them dry. Next, core each apple and slice them in half lengthwise.
Step 2: Set up the air fryer. Line your air fryer basket with parchment paper specifically designed for air fryers. Place the apple halves, skin side down, in the basket.
Step 3: Add the toppings. Place ½ tablespoon of butter on each apple half, drizzle with maple syrup, and sprinkle generously with cinnamon.
Step 4: Air fry the apples. Pour apple cider into the bottom of the basket over the parchment paper. Set your air fryer to 350°F and cook for 20 minutes.
Step 5: Plate and serve. Transfer the baked apple to bowls. Spoon some of that delicious pan juice over the top. Add a dollop of Greek yogurt and sprinkle with toasted nuts. For an extra touch of sweetness, drizzle with a bit more maple syrup and a dash of cinnamon, and enjoy!

No air fryer? No worries! Here’s how to make these delicious baked apples in the oven:
- Place the apple halves, skin side down, in a parchment-lined baking dish. Place ½ tablespoon of butter on each apple half, drizzle with maple syrup, and sprinkle with cinnamon.
- Pour the apple cider into the bottom of the baking dish, and bake at 375°F covered with foil for 30 minutes, then uncover and bake until the apples are tender but still have a slight bite when pierced with a knife, another 20-30 minutes.
- Transfer the baked apples to bowls, spoon some pan juices on top, and finish with Greek yogurt, toasted nuts, maple syrup, and a sprinkle of cinnamon.
Recipe tips and FAQs
- When coring your apples, avoid going all the way through to the bottom. This helps contain the liquid during baking, adding extra flavor and moisture. Use an apple corer to hollow the center about halfway down, then finish scooping out the core and seeds with a small spoon.
- To bring out the best flavor in your walnuts, toast them in a dry skillet over medium heat. Stir constantly until they are lightly golden and fragrant.
- Make sure the apple halves are of similar size so they cook evenly. If some halves are larger, you may need to remove them from the air fryer sooner so they don’t overcook.

- Optional decadent drizzles – Drizzle peanut butter, Nutella, or caramel sauce for an extra indulgent touch. Torani sugar-free caramel sauce is a personal favorite.

Ingredients
- 2 Autumn Glory apples other good apples for baking/ air frying are: Jonagold, Honeycrisp, Braeburn, Winesap, or Pink Lady apples
- 2 tbsp butter sliced into 4 pieces
- 1 tbsp maple syrup *and extra for drizzling
- cinnamon to taste
- ½ cup apple cider or apple juice
For the topping:
- 1 cup 2% plain Greek yogurt -you can also use vanilla Greek yogurt for added sweetness
- 2 tbsp chopped walnuts lightly toasted
Instructions
- Wash the apples and pat dry. Core the apples, and slice in half lengthwise.
- Place sliced apples, skin side down, into a parchment-lined air fryer basket (use the ones made for air fryers- I include a link to the ones I use in the post).
- Top each half with ½ tbsp butter, drizzle with maple syrup, and sprinkle with cinnamon.
- Pour the apple cider into the bottom of the basket (on top of the parchment) and air fry at 350 degrees F. for 20 minutes. Apples should be soft when pierced with a knife, but still have a little bite to them.
- Carefully place the apple halves into 2 bowls, and spoon some of that flavorful pan juice on top. Top each apple with ½ cup Greek yogurt and sprinkle with toasted nuts. Drizzle with maple syrup and sprinkle extra cinnamon on top, if desired.

- You can adjust the amount of yogurt to add more protein. Look for Greek yogurt that has the highest amount of protein per serving. Brands like Oikos Pro provide an additional protein boost.
