Air Fryer Apples with Greek Yogurt

An easy recipe for Greek yogurt stuffed baked apples in an air fryer, perfect for breakfast or dessert.

Equipment

  • Air Fryer *I used a Cosori brand air fryer
  • Air fryer parchment liners *make sure that they are designed for air fryer use. I bought mine on Amazon.

Ingredients

  • 2 Autumn Glory apples other good apples for baking/ air frying are: Jonagold, Honeycrisp, Braeburn, Winesap, or Pink Lady apples
  • 2 tbsp butter sliced into 4 pieces
  • 1 tbsp maple syrup *and extra for drizzling
  • cinnamon to taste
  • ½ cup apple cider or apple juice

For the topping:

  • 1 cup 2% plain Greek yogurt -you can also use vanilla Greek yogurt for added sweetness
  • 2 tbsp chopped walnuts lightly toasted

Instructions

  • Wash the apples and pat dry. Core the apples, and slice in half lengthwise. 
  • Place sliced apples, skin side down, into a parchment-lined air fryer basket (use the ones made for air fryers- I include a link to the ones I use in the post).
  • Top each half with ½ tbsp butter, drizzle with maple syrup, and sprinkle with cinnamon.
  • Pour the apple cider into the bottom of the basket (on top of the parchment) and air fry at 350 degrees F. for 20 minutes. Apples should be soft when pierced with a knife, but still have a little bite to them.
  • Carefully place the apple halves into 2 bowls, and spoon some of that flavorful pan juice on top.  Top each apple with ½ cup Greek yogurt and sprinkle with toasted nuts.  Drizzle with maple syrup and sprinkle extra cinnamon on top, if desired.

Notes:
  • Directions for baking in the oven and more tasty variations are included in the post.
  • You can adjust the amount of yogurt to add more protein. Look for Greek yogurt that has the highest amount of protein per serving.  Brands like Oikos Pro provide an additional protein boost.
  • Other delicious topping ideas are golden raisins, freshly grated nutmeg, and caramel sauce (I love the Torani sugar-free caramel sauce!)
  • To toast the walnuts, place them in a dry skillet over medium heat and toast, stirring constantly, until lightly golden and fragrant.
