Ingredients you’ll need

ingredients for buffalo dip measured out on a counter
  • Rotisserie chicken. Using rotisserie chicken saves time and adds instant mouthwatering flavor. Pull and shred the chicken; you’ll need about 2 ½ cups.
  • 2% Greek yogurt. This adds creaminess and tang. If you prefer, you can use sour cream or full-fat Greek yogurt here.
  • Buffalo wing sauce. I used extra mild buffalo wing sauce, but feel free to adjust to your heat threshold with a medium or hot wing sauce. Frank’s Red Hot is a classic!
  • Small curd cottage cheese. Cottage cheese keeps the dip creamy and boosts the protein. I used the Good Culture brand for its rich texture and flavor.
  • Garlic powder. It adds a subtle, savory depth. If you prefer, you can use fresh minced garlic, about one clove.
  • Blue cheese. For blue cheese lovers, this adds a bold flavor. If you’re not a fan, no worries. You can leave it out.
  • Sharp cheddar cheese. Freshly shredded cheese melts better and tastes fresher. You’ll need about 1/2 cup for the dip and a bit more to melt on top.  Feel free to substitute a milder cheddar or a mix like Colby Jack.
  • Salt and pepper. To taste.

How to make buffalo chicken dip with cottage cheese

Recipe tips and FAQs

  • Blend for smoothness – If you prefer a smoother consistency, blend the cottage cheese mixture before adding the chicken and other ingredients.
  • Adjust the spice level – To ensure the perfect heat level, use extra mild, medium, or hot buffalo sauce, or a blend of heat levels. You can also add a dash of hot sauce, cayenne pepper, or red pepper flakes to turn up the heat.
  • Bake until bubbly – To achieve that perfect, gooey texture, bake the dip until it’s bubbly and the cheese on top is melted and slightly golden. This usually takes about 30 minutes at 350°F.

Variations

Looking to customize your cottage cheese buffalo chicken dip? Here are some fun and flavorful add-in ideas:

  • Vegetable add-ins. Consider adding chopped green onions and diced celery for extra flavor and crunch. For a nutrient boost and a touch of greenery, stir in a handful of chopped spinach. Add sliced jalapeños if you can handle the heat!
  • Crispy bacon bits. The smoky, savory element is DELICIOUS with hot and tangy buffalo sauce.
  • Ranch dressing. For an extra flavor boost, stir a packet of ranch dressing mix into the dip before baking. And/or drizzle creamy ranch dressing over the warm dip before serving.

FAQ

Can I make this dip ahead of time?

Absolutely! Simply follow the recipe up to the point of baking, then cover the dish tightly with plastic wrap or aluminum foil and refrigerate. When ready, bake as directed, adding 5-10 minutes to the baking time if needed.

What can I substitute for cottage cheese if I’m not a fan?

If you’re not a fan of cottage cheese, you can substitute it with an equal amount of ricotta cheese. The texture will be slightly different but will still add creaminess to the dip.

Can I serve this dip cold?

While classic buffalo chicken dip is served warm, you can certainly enjoy it cold if you like. Just know that the texture may be slightly different when cold, but it will still be delicious!

Can I use canned chicken instead of rotisserie chicken?

While rotisserie chicken adds great flavor and texture to the dip, you can substitute it with canned chicken in a pinch. Just make sure to drain the canned chicken well before adding it.

Equipment

  • Mixing bowl
  • 8×8 baking dish

  • ¾ cup mild buffalo wing sauce *I used mild but go with your spice preference- if you are using regular Franks Red Hot, you'll only need about ½ cup
  • 1 cup plain 2% Greek yogurt
  • ½ cup small curd cottage cheese I used Good Culture
  • ½ tsp garlic powder
  • ¼ cup crumbled blue cheese *optional-leave out if you're not a blue cheese fan
  • 6 oz sharp cheddar cheese shredded from the block, divided
  • salt and pepper to taste

Instructions

  • Preheat the oven to 350 degrees F. and spray an 8×8 baking dish with non-stick spray (I used avocado oil).
  • Mix the shredded chicken, wing sauce, Greek yogurt, cottage cheese, garlic powder, blue cheese (if using), and half of the shredded cheddar cheese in a large mixing bowl. Season with salt and pepper to taste.
  • Pour the mixture into an 8×8 baking dish and top with the remaining shredded cheddar cheese.
  • Bake for 30 minutes, or until cheese is melted and bubbly.
  • Garnish with green onions and serve with celery, carrots, and tortilla chips (or your favorite dipping chips or crackers).

Notes

    • Blend for smoothness – If you prefer a smoother consistency, blend the cottage cheese mixture before adding the chicken and other ingredients.
    • Adjust the spice level – To ensure the perfect heat level, use extra mild, medium, or hot buffalo sauce, or a blend of heat levels. You can also add a dash of hot sauce, cayenne pepper, or red pepper flakes to turn up the heat. If you are using anything other than mild wing sauce, start with 1/2 cup and adjust accordingly to taste. You won’t need as much of the hot wing sauce.
