Easy Raspberry Spinach Salad {Christmas Salad}

An easy raspberry spinach salad (aka Christmas salad) recipe made with fresh baby spinach, fresh raspberries, candied walnuts, and raspberry vinaigrette dressing. This colorful salad is full of anti-inflammatory antioxidants and incredibly delicious!

This simple holiday salad recipe came from my friend, Jackie, in Ohio. She brought it to our recipe club Christmas dinner a few years back and it’s become a personal favorite. It’s simple, elegant, and so delicious! Not to mention, it looks beautiful on a holiday table this time of year. However, it’s not just for Christmas, you can enjoy this easy raspberry spinach salad recipe all year long!

Salad Ingredients

  • Raspberries- you’ll need a pint of fresh raspberries
  • Baby spinach- you can go with all baby spinach or do a mix of half baby spinach and half mixed greens
  • Glazed walnuts- you can make homemade glazed nuts (see recipe below) or grab a bag of glazed nuts from the store.
  • Raspberry Vinaigrette dressing- A few of my favorite store-bought dressings for this salad are Newman’s Own Raspberry Walnut Vinaigrette, Briannas Raspberry Poppyseed Dressing, and Marie’s Raspberry Vinaigrette. You can always go with your favorite vinaigrette dressing here. Homemade Maple Balsamic Vinaigrette and Creamy Balsamic are delicious here, too.

How To Make Christmas Salad

Step 1. Wash raspberries and pat dry.

Step 2. Add all ingredients together in a large salad bowl. Toss to mix well. Serve immediately.

How To Make Homemade Glazed Walnuts

Store-bought candied walnuts are a great time-saver, but you can easily make your own. If you have raw walnuts on hand and want to DIY, try this method. Works great with pecans, too. In a large microwave-safe bowl, mix 2 cups chopped walnuts, 1/4 cup water, and 3/4 cups sugar. Microwave for 3 minutes, stir and add an additional 3-5 minutes (depending on the wattage of your microwave). Nuts should be covered with a caramelized mixture, but check often so they don’t burn. Spread on a parchment-lined baking sheet to harden. When cooled and hardened, store in an airtight container.

What To Serve With Spinach Salad

During the holidays, some of our favorite dishes to serve alongside this salad are standing rib roast, southern baked mac and cheese, roasted green beans, southern collard greens, and slow cooker mashed potatoes.

Ingredients

  • 1 pint fresh red raspberries
  • 5 oz bag organic baby spinach washed and patted dry (you can also do a blend of half baby spinach and half mixed greens)
  • 1/2 cup glazed walnuts you can also use plain toasted walnuts
  • 8 oz Raspberry Vinaigrette Salad dressing *see notes dressing options.

Instructions

  • Wash raspberries and pat dry.
  • Toss all ingredients together and mix well. You can toss in the dressing or serve it on the side.
  • Serve immediately.

Notes

The nutrition calculation is for the salad only.  Two tablespoons of dressing add 70 calories, 5 grams of fat, 7 grams of carbs, and 6 grams of sugar.  I usually serve the dressing on the side so each person can add their own to taste.
