Blueberry Protein Donuts with Orange Glaze

Donuts have always been one of my favorite breakfast treats. I would get SO excited for our, very rare, trips to Dunkin Donuts when I was a kid. I would always get the munchkins, that way I could have one of each flavor. The jelly-filled donuts coated in sugar crystals were always my favorite.
Most regular donuts are honestly too sweet for me now, I guess my taste buds have changed, and the fact that I just don’t eat a lot of sugar anymore. Don’t get me wrong, I still love a good artisan donut splurge. Cronuts totally rock my world, but I save those for the occasional treat. Donuts are a great way to celebrate a gym PR, just sayin’. 😉
I can enjoy these healthier donuts that satisfy my donut cravings without the excess sugar and calories. This protein donut recipe might just be my new favorite. The texture is perfect and these babies are full of fresh, ripe, blueberries. I had great results using Naked Whey protein powder in this recipe. I love that it’s just pure, clean whey concentrate with nothing added.
The glaze adds a burst of orange flavor and just the right amount of decadent sweetness. These donuts are also great sliced in half and toasted, topped with a little butter and all-fruit blueberry preserves. So dang good. I honestly don’t even miss the real thing.

Baking Tip
I used King Arthur Flour gluten-free all-purpose baking mix for this recipe with amazing results. The baking mix already has the leavening ingredients and salt added, so there’s no need to add that into the recipe. You can easily swap this out for a regular all-purpose baking mix instead of the gluten-free version. Just make sure that the baking mix has the leavening ingredients so your donuts will rise.
Storing
Only glaze the donuts that you plan on eating right away. Any extra donuts can be frozen, unglazed, in an airtight container. Glaze the donut before serving for the best texture.
Reheating
I don’t recommend reheating these donuts in the microwave. It tends to dry them out. I love to slice these donuts in half and toast them. If they are frozen, you can thaw them out first before toasting. You can also reheat them on a low bake setting (around 250-300 degrees) in the oven until heated through.
Ingredients You’ll Need
- Gluten-Free Baking Mix. You can also use regular baking mix for this recipe. The baking mix already has the leavening ingredients included, so make sure that you are not using all-purpose flour.
- Whey protein. I used a whey protein concentrate for this recipe, but a whey protein blend will work great, too.
- Eggs. You’ll use a blend of whole egg and egg whites.
- Milk. I used unsweetened almond milk for this recipe, but regular milk works well if you prefer that option. Using regular milk will change the macros for the recipe a bit.
- Orange juice. Juice a fresh orange for this recipe. Trust me, it’s totally worth it.
- Oil. I’ve used grapeseed oil and avocado oil with great results. The oil adds a bit of moisture.
- Maple syrup. Use the good stuff. You’ll need good quality real maple syrup for this recipe to add the perfect amount of sweetness.
- Vanilla. Vanilla extract adds great flavor.
- Orange zest. Fresh orange zest adds incredible flavor!
- Fresh blueberries. Make sure that your blueberries are very ripe. Under ripe berries will be too firm and tart.
How To Make Blueberry Protein Donuts
Preheat the oven to 350 degrees F. Spray two (6-hole) donut pans with cooking spray. In a medium-sized bowl, whisk together the flour and protein powder. In the bowl of an electric mixer, combine all remaining ingredients. Slowly add in the flour mixture until combined.
Gently fold in berries with a spatula.
Pour the batter, evenly, into 12 donut molds. Bake for 14 minutes. Be sure not to overbake.
How To Make Fresh Orange Donut Glaze
In a small bowl, whisk together:
- 1/2 cup powdered sugar
- 1 tbsp freshly squeezed orange juice
- 1/4 tsp fresh orange zest
- 1/4 tsp pure orange extract
*For a thicker glaze, reduce the orange juice to 1-2 teaspoons. This recipe makes a drippy glaze, but it’s easy to make a thicker version by slowly adding 1 teaspoon of juice at a time while stirring to achieve your desired texture. Ingredients
- 1 cup all-purpose gluten-free baking mix you can also use regular all-purpose baking mix
- 30 grams whey protein vanilla or unflavored recommended
- 1 egg
- 1/3 cup egg whites
- 1/2 cup unsweetened almond milk can also use regular milk
- 1/4 cup freshly squeezed orange juice
- 1 tbsp grapeseed oil or avocado oil
- 2 tbsp real maple syrup
- 1 tsp vanilla extract
- 1 tsp fresh orange zest
- 1/2 pint fresh blueberries rinsed and drained
- For The Glaze
- 1/2 cup powdered sugar
- 1 tbsp freshly squeezed orange juice
- 1/4 tsp orange zest
- 1/4 tsp pure orange extract
Instructions
- Preheat oven to 350 degrees F.
- Spray 2 (6 hole) donut pans with cooking spray.
- In a medium-size bowl, whisk together the flour and protein powder.
- In the bowl of an electric mixer, combine all remaining ingredients, except the blueberries.
- Slowly add in the flour mixture until combined.
- Gently fold blueberries into the batter with a spatula
- Pour the batter, evenly, into donut molds. Bake for 14 minutes. Be sure not to overbake.
- Whisk the glaze ingredients together in a small bowl and drizzle over donut right before eating.
