Peanut Butter and Jelly Casein Protein Cookies are a delicious and easy gluten-free protein cookie made with creamy peanut butter and all-fruit preserves. It’s way more fun to eat your casein protein than drink it!

Peanut Butter and Jelly Casein Protein Cookies

I’ve been making these peanut butter and jelly casein protein cookies for a long time as a bedtime snack on my heavy lifting days. I don’t enjoy drinking casein protein, it’s pretty thick and chalky, but I do love it for its muscle recovery benefits. Having casein at night helps me hit my protein goals and have a quality source of slow-digesting protein in my system when I sleep. Pairing the protein with a fat and carb source rounds out the meal.

Mixing casein protein powder with water, milk or liquid of choice to make pudding is another popular way to prepare it, but baking it into cookies is my favorite dessert-like snack. These nut butter-based cookies have more of a biscuit-like texture than a chewy cookie, which makes them even more epic topped with jam.

How To Make Cookies With Casein Protein Powder

These cookies take only minutes to make. Stir the casein, nut butter, baking powder, vanilla, and almond milk with a fork until you have moist crumbles that look like this. It will look more like biscuit dough than cookie dough.

Using your hands, grab a golf-ball-size amount of the mixture, and press it into a ball. Then roll the ball to smooth the sides. You should end up with three, evenly-sized, cookies.

Next, using your hand or the back of a large spoon, press down on the ball to flatten into a cookie shape.

I like to get fancy and top them off with a little coarse maple salt. However, you can just use regular coarse salt or leave it off entirely. I love a sweet and salty combo!

Next, bake them for 12 minutes or until desired doneness and top with your favorite jam. I love the all-fruit jams with no added sugar or this amazing homemade strawberry jam without refined sugar.

Ingredients

  • 1 oz vanilla casein powder 1 scoop = about 1 oz
  • 1 tbsp no-stir creamy peanut butter
  • 1/2 tsp baking powder
  • 4 tbsp unsweetened almond milk *can use regular milk but it changes the macros
  • 1/4 tsp coarse salt
  • 1/8 tsp vanilla extract *optional

Instructions

  • Preheat oven to 375 degrees F.
  • Combine all ingredients in a medium-size bowl with a spoon.  Mixture will be crumbly when thoroughly mixed.
  • Form mixture into 3 balls about the size of a golf balls.
  • Line a baking sheet with parchment paper and press cookies with your hand to flatten them out. 
  • Sprinkle with salt and bake for 12 minutes.
  • Top with jam and serve warm.

    Have bean learning about the benefits of casein and other amino acids to our body and this recipe looks delicious.
