Peanut Butter and Jelly Casein Protein Cookies

A delicious and easy gluten-free protein cookie made with creamy peanut butter and all-fruit preserves.

Ingredients

  • 1 oz vanilla casein powder 1 scoop = about 1 oz
  • 1 tbsp no-stir creamy peanut butter
  • 1/2 tsp baking powder
  • 4 tbsp unsweetened almond milk *can use regular milk but it changes the macros
  • 1/4 tsp coarse salt
  • 1/8 tsp vanilla extract *optional

Instructions

  • Preheat oven to 375 degrees F.
  • Combine all ingredients in a medium-size bowl with a spoon.  Mixture will be crumbly when thoroughly mixed.
  • Form mixture into 3 balls about the size of a golf balls.
  • Line a baking sheet with parchment paper and press cookies with your hand to flatten them out. 
  • Sprinkle with salt and bake for 12 minutes.
  • Top with jam and serve warm.
