Easy Raspberry Compote

I’m seriously blown away by the new frozen dessert mousse from So Delicious. I couldn’t wait to share this new dairy-free deliciousness with you. I created a super simple compote recipe to complement the dairy-free lemon mousse. I love the versatility of fruit compotes. It’s a delicious topping for ice cream or yogurt and incredible poured over your favorite pancake or waffle recipe in place of syrup.
I’m currently loving this light and creamy dairy-free frozen mousse. It’s soft and scoopable right out of the freezer. No waiting for it to soften up, which is great when you’re really ready to dive in. 🙂
Homemade Compote Is Easy To Make
The lemon swirl is filled with decadent layers of lemon curd. So divine. I couldn’t think of a better compliment to this flavor than an easy batch of homemade raspberry compote. You can make this recipe in advance or serve it warm on top of a heaping scoop of frozen mousse (my preference). Either way, it’s amazing and full of good micronutrients. Did you know that raspberries are a good source of dietary fiber?!
Use Frozen Fruit If Berries Are Out Of Season
I used frozen organic raspberries in this recipe. It keeps things simple, makes a nice sauce with the added moisture and you can get them year-round.
The mixture will continue to thicken as it cools.
I can think of so many ways to use this compote, it definitely won’t last long in this house.

Easy Raspberry Compote
Ingredients
- 2 1/2 cups frozen raspberries (112 grams)
- 1/4 cup coconut sugar
- 1 tbsp lemon juice
Instructions
- In a medium sauce pan, combine raspberries, coconut sugar and lemon juice
- Bring to a boil and boil for 5 minutes, stirring frequently
- Lower heat to low and simmer for 10 minutes, stirring occasionally to prevent sticking
- Cool and serve. It will thicken as it cools

Uh that dessert mousse does sound delicious!! I am also a sucker for lemon..so I would go for that one first too! Looks aweome. I’m going to have to look for that.
