I am a huge believer in meal prepping for the week. It helps reframe your mindset and simplifies mealtime with meals ready to go when you need them. Recipes like baked oatmeal and breakfast burritos for the week make mornings so much easier and help me stay on track.
I also love making sheet pan dinners on the weekends and portioning them out for lunches. My sheet pan Greek meatballs is one of my all-time favorite meal prep lunches to enjoy during the week. Other great meal prep options include superfood salad, beef breakfast muffins, and beef stir fry.
