Amazing Lemon Chicken Salad
This flavorful lemon chicken salad recipe is fast and easy to make using pre-cooked shredded chicken, fresh lemon juice, slivered almonds, and chopped fresh sage leaves. It makes one of the best chicken salad sandwiches that I’ve ever eaten! You can easily swap the sage for fresh basil or thyme for a flavorful twist.
How To Make Lemon Chicken Salad with Fresh Sage
Ingredients You’ll Need:
- 2 cups shredded white meat chicken (I use precooked boneless chicken breasts that I make in the pressure cooker. You can also use a shredded rotisserie chicken)
- 1/3 cup light mayonnaise
- 2 tsp finely chopped fresh sage leaves (don’t skip the fresh sage! You can usually find this in the produce section of the grocery store)
- Juice of 1 lemon
- 1 tsp of fresh lemon zest
- 1 tbsp sugar
- 1/4 cup slivered almonds
- salt and pepper, to taste
Directions:
In a medium-size bowl, whisk the mayo, sugar, lemon juice, zest, and finely chopped fresh sage. Add shredded chicken, almonds and season with salt and pepper. Stir until mixed. Serve immediately or store in a sealed container in the refrigerator until ready to eat.
Recipe Variations
Try swapping the fresh sage for fresh basil or thyme. Lemon basil chicken salad is another summertime favorite!

- Spread on fresh bread with green leaf lettuce
- On a croissant with fresh spinach, arugula or green leaf lettuce
- On Hawaiian rolls
- Stuffed in a pita with greens
- Rolled up in a low-carb wrap with greens
- In a large bowl with an assortment of crackers and fresh fruit
- On top of a mixed green salad
- On top of sliced cucumbers for a tasty snack

Ingredients
- 2 cups shredded white meat chicken
- 1/3 cup light mayonnaise
- 2 tsp fresh sage finely chopped
- juice of 1 lemon about 1 1/2 tbsp
- 1 tsp lemon zest
- 1 tbsp sugar
- 1/4 cup slivered almonds
- sea salt and pepper to taste
Instructions
- In a medium-size bowl, whisk mayo, sage, lemon juice, zest and sugar
- Add chicken and almonds and stir to coat
- Season with salt and pepper, to taste
