What is a pink lady?
The pink lady cocktail is a prohibition-era concoction made with gin, applejack liqueur, grenadine, lemon juice, and egg whites. As a result, the pink lady has a mellow, fruity flavor, a touch of tartness, and botanical notes with a frothed, velvety viscosity -and of course, a pretty pink pigment.
That being said, this pink lady mocktail captures the essence of the classic cocktail without the booze. That way, you can experience the balanced, delicate flavors and luxurious texture without the negative aftermath of consuming mixed drinks. Win-win!
Why you’ll love this recipe
- Healthier alternative. This virgin pink lady mocktail is an excellent choice for those watching their calorie intake. Plus, it packs a surprising 5 grams of protein per serving.
- Inclusive beverage option. Everyone can enjoy this delightful booze-free beverage, regardless of personal alcohol preferences and legal drinking age status.
- Elegant entertaining. Whether hosting a brunch, baby shower, bridal shower, or celebrating Galentine’s Day💃, this refreshing pink drink is the perfect choice!
Ingredients you’ll need
- Apple cider – In the absence of gin and applejack liqueur, apple cider offers subtle warming spice and enhanced flavor. You can use apple juice in a pinch, but the final flavor won’t be as complex.
- Lemon juice – Balances the flavor, aroma, and acidity, creating a well-rounded, refreshing drink.
- Grenadine – This pomegranate-flavored sugar syrup is responsible for flavor and the drink’s distinctive pink color.
- Pasteurized liquid egg whites – Adding egg whites to mocktails and cocktails helps thicken the liquid, creating a silky mouthfeel with a luscious layer of foam on top.
- Ice – Shaking the mocktail ingredients over ice chills the liquid and enhances the frothiness.
- Sparkling mineral water – Adds volume and delectable fizz.
- Cherries – For garnish.
How to make a pink lady mocktail
Step 1: Dry shake. Add the apple cider, lemon juice, grenadine, and egg whites to a cocktail shaker or blender bottle and vigorously shake (no ice!) until combined.
Step 2: Wet shake. Add a scoop of ice and continue shaking until chilled.
Step 3: Assemble. Pour 1 ounce of the sparkling mineral water into each cocktail glass (2 total), then strain the chilled mixture over top.
Step 4: Garnish. Toss a cherry into each glass and enjoy!
Recipe tips
- Shake vigorously. You must shake the ingredients vigorously in a cocktail shaker, first without ice to emulsify the egg whites and then again with ice to chill the liquid. This will help create a frothy consistency and foam on top.
- Adjust sweetness. After shaking it with ice, give it a taste, and adjust the sweetness to your liking with more grenadine. If it’s too sweet, add more sparking water to dilute the flavor.
- Consider double-straining. If you prefer a smoother texture without pulp or ice shards, strain the mocktail a second time using a fine-mesh strainer while pouring it into the glass.
Variations
I don’t recommend deviating too far from this pink lady mocktail recipe, as it’s delightful as is. However, you can get creative with subtle flavor enhancements, such as adding a splash of cranberry, grapefruit, or white grape juice, a dash of vanilla extract, and garnishing with fresh lemon zest. You can also adjust the ratio of the ingredients to your taste preference.
Storing
If you don’t finish your drink, you can strain the liquid and keep it covered in the fridge for 1-2 days, but as with most mocktails and mixed drinks, this pink lady drink is best enjoyed immediately after making it.
FAQs
While the pink lady cocktail and the white lady cocktail are similar gin cocktails, the remaining ingredients are not the same. For instance, the Pink Lady typically includes gin, applejack, grenadine, and lemon juice. In contrast, the White Lady consists of gin, triple sec (orange liqueur), and lemon juice.
If you use fresh, pasteurized eggs, consuming them raw in mixed drinks carries a very low risk of foodborne illness.
The brine in a can of chickpeas, also known as aquafaba, is a common vegan substitute for egg whites and can create a frothy texture when shaken vigorously. Just be sure to use the brine from an unsalted and unseasoned can of chickpeas. I’m, personally, not a fan of this substitute in drinks, but it is an option.
