3 oz honey smoked salmon 2 packed cups fresh greens 1 mandarin orange peeled and divided into sections 1/2 cup fresh blueberries 1/2 shallot diced 1/4 cup orange juice not from concentrate 2 tbsp balsamic vinegar 1/2 tbsp extra virgin olive oil salt and pepper to taste
Combine 1/4 cup blueberries, half of the shallots, orange juice, balsamic vinegar, olive oil and salt and pepper in a blender and blend until smooth. Set aside.
Add greens, remaining onions, remaining blueberries and orange slices in a bowl and top with salmon.
Drizzle dressing over top and enjoy.
