Sparkling Mixed Berry Lemonade Mocktail

A tart, fizzy mixed berry lemonade with a zero-calorie sweetener and no added sugar. Ready in 10 minutes.

Equipment

  • High-powered blender *I use a Vitamix

Ingredients

  • 16 oz frozen mixed berries *I used a raspberry, blueberry, strawberry, and blackberry blend
  • cups freshly squeezed lemon juice *6 large lemons
  • 1 cup water
  • ½ cup Splenda *regular zero-calorie granulated, or granulated sweetener of choice
  • 2-3 cups sparkling water *plus more for serving on the side
  • ice to fill the glasses

Instructions

  • In a high-powered blender, blend the frozen berries, fresh lemon juice, 1 cup of water, and Splenda until smooth. *Straining the mixture through a fine mesh sieve after blending is optional. If you're using a powerful blender, it will grind up most of the seeds.
  • Pour the mixture into a 2-quart pitcher.
  • Add 2 cups of sparkling water and stir. Taste and add more sparkling water, if needed.
  • Pour into ice-filled glasses and serve.

Notes

  • I usually make the drink with 2 cups of sparkling water and serve it with sparkling water bottles on the side. This way, everyone can adjust the taste to their liking.
  • For a smoother, seed-free texture, strain the blended berry mixture through a fine mesh sieve before adding the sparkling water.
  • If not serving right away, chill the berry mixture separately from the sparkling water, then combine just before serving to keep it fizzy.
