Grilled Peaches

Grill the peach skin side down for 4 minutes, turn over and grill 3-4 more minutes until done.  Divide the yogurt between two bowls and plate the peaches.  Drizzle with maple syrup and garnish with mint, if desired.

Ingredients

  • 2 peaches slightly firm, sliced in half
  • 1 tsp olive oil
  • 8 oz plain Greek yogurt full-fat
  • 2 tsp real maple syrup
  • 2-3 mint leaves finely chopped

Instructions

  • Slice peaches in half, remove the pit and brush with olive oil
  • Place on a heated grill and cook with skin side down for 4 minutes, turn and cook 3-4 minutes more
  • Serve warm with yogurt, maple syrup and fresh mint
