Non-Alchoholic Christmas punch

This is the absolute best Christmas punch recipe made with light cranberry juice, ginger ale, unsweetened pineapple juice, and almond extract.  I always get requests for this lightened-up punch recipe at holiday parties.

Ingredients

  • 1/3 cup granulated stevia
  • 1 quart cranberry juice no-sugar-added
  • 2 cups unsweetened pineapple juice
  • 3 tbsp almond extract
  • 2 liter bottle diet-ginger ale I use the zero sugar ginger ale
  • Fresh cranberries for garnish

Instructions

  • Wash the cranberries and freeze them.
  • They will serve as the "ice" and keep the punch chilled.
  • Mix all ingredients together in a large container (except ginger-ale) and refrigerate for 1 day to let the flavors mingle.
  • Right before serving, add the ginger ale and the cranberries, stir and enjoy.

Notes

    • Before freezing, spread the cranberries in a single layer on a baking sheet lined with parchment paper. This prevents them from clumping together and makes using just the amount you need easier.
    • Add ginger ale just before serving the punch to maintain the carbonation. Stir gently to preserve the fizz!
    • You’ll need a punch bowl or clear beverage dispenser large enough to hold at least 5 quarts of liquid. This gives you plenty of room to mix the punch without making a mess and makes it easier to serve.
