1Pie pumpkinAlso known as sugar pumpkins. They are smaller and sweeter than the large pumpkins used for jack-o'-lanterns. They are ideal for this project because they have a sturdy base that sits flat and is easy to carve.
GuacamoleIt makes it look like the pumpkin is heaving a chunky green concoction out of its carved mouth, but really, it’s everyone’s favorite creamy, flavorful dip. My 5 Ingredient Guacamole Dip recipe is the best, but you can use store-bought guacamole to save time.
DippablesChoose a few dippable snacks to scoop up the guacamole. Tortilla chips or crackers are a classic crunchy choice. Fresh veggies also pair well with the creamy guacamole.
Instructions
Wash the pumpkin. Rinse the pumpkin under cool running water to remove loose dirt and debris from the surface, using a soft brush or cloth to scrub the surface. Use a clean towel to dry the pumpkin completely.
Cut off the top and scoop out all the seeds and pulp. Draw eyes, nose, and a wide, open mouth for the guac to "pour" out of, then carefully carve the facial features.
Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash with a fork until smooth but slightly chunky. Add finely chopped onion, tomato, jalapeño, cilantro, and garlic. Stir in fresh lime juice, a splash of pickled jalapeno juice, and salt. Head to my Guacamole Dip for the full recipe and ingredient amounts.
Place your carved pumpkin on a large serving platter or tray. Spoon the guacamole into the mouth, letting it spill out to create the "puking" effect. Arrange tortilla chips and other dippable snacks around the pumpkin and serve.
Notes
Recommended tools. A basic carving kit with a saw, scoop, and carving tools will help you easily carve your pumpkin’s face. If you don’t have a carving kit, use a sharp knife to cut off the top and carve and a spoon to remove the seeds and pulp from the inside.
Sanitize your pumpkin. Since we’re using the pumpkin for decorative purposes with food, you may want to sanitize your pumpkin with a solution of one part white vinegar and three parts water. Wipe down the pumpkin with this solution, then rinse and dry thoroughly before carving.
Customize the face. Get creative with your pumpkin’s facial expression. The face adds personality to the food table, whether it’s a scary, silly, smiley, or a shocked look.
