12 ozsliced brie cheese*brie with the thin, edible rind recommended
1/3cupsliced almonds
10ozapricot jam or preserves*I use the Trader Joe's low sugar apricot preserves
3tbspbrown sugar
Instructions
Preheat oven to 350 degrees F.
Spray a round pie plate or shallow baking dish with olive oil spray
Place chopped brioche (should be in about 1" cubes) in the bottom of the dish
In a small bowl, whisk together the eggs, half and half, salt and pepper
Pour egg mixture evenly over the cubed brioche
Place sliced brie on top of the brioche
Spread apricot jam/preserves on top of sliced brie
Add almonds on top of the jam then sprinkle with the brown sugar
Loosely cover the dish with foil and bake for 20 minutes. I like to uncover and broil for less than a minute until the cheese is nice and bubbly. If you use the broil setting, watch constantly so it doesn't overcook.
