How To Make Blueberry Lavender Simple Syrup
Place all ingredients, except lavender, in a pot and bring to a boil, stirring often to dissolve the cane sugar. Reduce heat down to low, add lavender and simmer for 10-12 minutes. Strain syrup through a fine-mesh colander, pressing berries to release all the juices. Store in a sealed container in the refrigerator for up to 1 week.
Notes
Don’t over-muddle. The goal is to mash the blueberries just until they burst and bruise the mint leaves just enough to release their oils. Breaking down the mint too much can make it taste bitter, so be gentle!
Strain for a smoother sip. If you don’t want bits of mint and blueberry skin in your drink, strain the muddled mixture through a fine mesh sieve before returning it to the glass and building the rest of the drink.
Use the proper glassware. A tall glass, such as a highball or Collins glass, provides ample space for the muddled ingredients, liquids, and lots of ice.
Elevate your ice. If you have time, freeze blueberries and mint in your ice cubes. Not only do they look beautiful in the glass, but they also add a hint of flavor as they melt.
