Apple Pie Overnight Oats
A simple and easy recipe for apple overnight oats using microwave cooked apples, ground cinnamon, whole oats, and natural sweetener.

- 1 cup whole oats uncooked
- 1 cup unsweetened almond milk or regular 2% milk
- 2 tsp vanilla extract
- 2 tsp real maple syrup can also use maple sugar, coconut sugar, or sugar-free syrup
- 1/2 tsp cinnamon
- dash nutmeg a dash goes a long way
- 2 tbsp nuts walnuts, pecans or almonds
- 1 medium apple cored and chopped into bite-size pieces
Mix together: oats, almond milk (or regular milk), vanilla, maple syrup, cinnamon, and nutmeg.
Divide the mixture between two mason jars or glass containers with a lid.
Top with nuts. Refrigerate oat mixture, covered, overnight.
Chop apple into bite-size pieces and place in a small glass microwaveable dish.
Cover and cook for 2-4 minutes until soft.
Add apples to oats and enjoy.
Drizzle with a little extra syrup and sprinkle with cinnamon, if desired.
