Air Fryer Sweet Potato Wedges
An easy recipe for sweet potato wedges cooked in an air fryer in under 20 minutes.

- 2 sweet potatoes medium size, peeled (this is optional) and sliced into 8 wedges
- 1 tbsp extra virgin olive oil or avocado oil
- 1/2 tbsp paprika
- 1 tsp seasoning salt
- 1/2 tbsp tapioca starch can also use cornstarch or arrowroot powder
Scrub the sweet potatoes and cut in half lengthwise (you can peel them or leave the skins on…your preference). Cut into 8 wedges
Place the cut potatoes into a large bowl and toss with the olive oil. Then add seasonings and toss to evenly coat.
Preheat the air fryer to 380 degrees F and spray the basket with EVOO spray.
Transfer the sweet potatoes, in batches if necessary, to the air fryer and lightly spray them with the olive oil spray.
Air fry for 8 minutes, flip, and cook for 7-10 more minutes or until golden and cooked through. Adjust seasoning to taste.
