Instructions
Toss the peaches in a tablespoon of sugar and ¼ tsp of salt. Let the peaches macerate for 45 minutes. *If you're using canned peaches, you can skip this step (see variations).
In a medium-size bowl, combine the topping ingredients with your hands and mix until it forms a crumbly texture.
Preheat the air fryer to 320 degrees F. and spray 4 ramekins with cooking spray.
Reserve 1 tbsp of the liquid from the macerated peaches, then drain the peaches well.
Stir the lemon juice and cornstarch together, add the reserved peach liquid, and toss with the drained peaches. Divide the peach mixture, evenly, between the dishes and sprinkle with cinnamon. Sprinkle with a little extra sugar, if desired.
Top the ramekins with the crumble mixture and air fry at 320 degrees F. for 15 minutes, until golden and bubbly.
Serve with vanilla ice cream, whipped cream, or Greek yogurt.
Notes
Bake it instead. My traditional peach crisp oven variation: Double the recipe ingredients and bake in a 7x11" glass baking dish at 350 degrees F. for 45 minutes.
Make sure your peaches are very ripe! If they’re not quite there, you can speed up the process by placing them in a paper bag for a day or two.
Shortcut with canned peaches. You can use 24 oz drained canned peaches in fruit juice instead of fresh and skip the maceration process. Since they are already sweetened, you won't need to add extra sugar. However, fresh is best.
Don’t skip the maceration step! Letting the peaches sit with sugar and salt draws out their natural juices, creating a deliciously syrupy filling.
Watch closely. Air fryers can vary in how they cook, so keep an eye on it. It should be golden and bubbly around the 15-minute mark, but it may need more or less time, depending on your model. I used a Cosori air fryer.
