Ingredients

  • 3 ripe avocados med-large
  • 1 small Roma tomato seeded and diced
  • cup finely chopped onion red or white
  • 1 fresh lime juiced
  • ½- 1 tbsp pickled jalapeno juice
  • Optional (but recommended) ¼ tsp garlic powder, ¼ tsp coarse salt, and chopped fresh cilantro

Instructions

  • Slice each avocado in half and remove the pit.
  • Scoop out flesh and place in a medium-size bowl; use a fork and mash to combine. (a pastry blender works great for this) or in a mortar and pestle.
  • Work remaining ingredients in until well mixed and serve. Adjust seasonings to taste and add chopped fresh cilantro, if desired.

Notes

*Not everyone loves cilantro like I do, so it's included as an optional add-in. You get the salty brine from the pickled jalapeños, so adjust added salt to taste. I love garnishing with coarse salt right before serving.
