Brown Sugar Baked Brie with Apricot Jam

A delicious and easy baked brie recipe made with apricot jam, brioche bread, eggs, half and half, brown sugar and almonds.

Ingredients

  • 4 slices brioche bread, cut into cubes
  • 2 eggs, beaten
  • 3 tablespoon half and half
  • ½ teaspoon salt
  • ¼ teaspoon fresh ground pepper
  • 12 oz sliced brie cheese *brie with the thin, edible rind recommended
  • cup sliced almonds
  • 10 oz apricot jam or preserves *I use the Trader Joe's low sugar apricot preserves
  • 3 tablespoon brown sugar

Instructions

  • Preheat oven to 350 degrees F.
  • Spray a round pie plate or shallow baking dish with olive oil spray
  • Place chopped brioche (should be in about 1" cubes) in the bottom of the dish
  • In a small bowl, whisk together the eggs, half and half, salt and pepper
  • Pour egg mixture evenly over the cubed brioche
  • Place sliced brie on top of the brioche
  • Spread apricot jam/preserves on top of sliced brie
  • Add almonds on top of the jam then sprinkle with the brown sugar
  • Loosely cover the dish with foil and bake for 20 minutes. I like to uncover and broil for less than a minute until the cheese is nice and bubbly. If you use the broil setting, watch constantly so it doesn't overcook.
  • Serve immediately with crackers and fresh fruit
