Vitamix Salsa

 Homemade red salsa is made in a Vitamix or high-powered blender in 5 minutes! Fresh tomatoes, onion, jalapeno, lime juice, and cilantro make this easy salsa recipe the best salsa ever!

Ingredients

  • 5 Roma Tomatoes cut into quarters- I used 5 med-large Roma tomatoes. You can go with 6 if they are on the smaller side.
  • ½ onion chopped into four pieces- I go with sweet onion, but use your favorite variety for salsa
  • 1 jalapeno stem removed, sliced in half and seeded- feel free to keep the seeds for extra spicy salsa!
  • ¼ cup fresh cilantro stems removed, packed
  • 2 cloves garlic
  • 2 tablespoon freshly squeezed lime juice about 1 large lime juiced
  • ½ teaspoon cumin
  • 1 teaspoon salt adjust to taste

Instructions

  • Place the tomatoes, onion, jalapeño, cilantro, garlic, lime juice, and spices into the Vitamix canister and secure lid. Blend on Variable #1, then quickly bump to Variable #2 using a tamper to push ingredients into the blade.
  • Blend until desired texture is reached (I like mine a little chunky).

Notes

If you don't have a Vitamix or high-powered blender you can easily make it in a food processor. Place the tomatoes, jalapeño, onion, garlic, and cilantro into the food processor and pulse until the desired texture is achieved.
