Raspberry Spinach Salad aka Christmas Salad

An easy holiday salad recipe made with baby spinach, fresh raspberries, and candied walnuts

Ingredients

  • 1 pint fresh red raspberries
  • 5 oz bag organic baby spinach washed and patted dry (you can also do a blend of half baby spinach and half mixed greens)
  • ½ cup glazed walnuts you can also use plain toasted walnuts
  • 8 oz Raspberry Vinaigrette Salad dressing *see notes dressing options.

Instructions

  • Wash raspberries and pat dry.
  • Toss all ingredients together and mix well. You can toss in the dressing or serve it on the side.
  • Serve immediately.

Notes

The nutrition calculation is for the salad only.  Two tablespoons of dressing add 70 calories, 5 grams of fat, 7 grams of carbs, and 6 grams of sugar.  I usually serve the dressing on the side so each person can add their own to taste.
A few of my favorite store-bought dressings for this salad are Newman's Own Raspberry Walnut Vinaigrette, Briannas Raspberry Poppyseed Dressing, and Marie's Raspberry Vinaigrette. You can always go with your favorite vinaigrette dressing here. Homemade Maple Balsamic Vinaigrette and Creamy Balsamic are delicious here, too.
