Strawberry Spinach Salad with Poppy Seed Dressing
A simple and easy summer salad recipe made with fresh baby spinach, almonds, and fresh strawberries topped with a flavorful poppyseed dressing.

- 1 quart fresh strawberries sliced
- ¼ cup slivered almonds
- ½ lb fresh baby spinach rinsed, dried and hard stems removed
- 4 oz sharp cheddar cheese cubed
- 1 tablespoon poppy seeds
- ½ cup agave nectar
- ½ cup extra virgin olive oil
- ¼ cup white distilled vinegar
- 1 tablespoon apple cider vinegar
- ¼ teaspoon paprika
- ¼ teaspoon Worcestershire sauce
- 1 tablespoon minced sweet onion
- ¼ teaspoon dry mustard
Place spinach, cheese, almonds and strawberries in a large bowl.
Place all remaining ingredients into a blender or Vitamix and blend until smooth and creamy.
Drizzle all over salad, toss to coat and serve.
