Apple Pie Overnight Oats

A simple and easy recipe for apple overnight oats using microwave cooked apples, ground cinnamon, whole oats, and natural sweetener.

Ingredients

  • 1 cup whole oats uncooked
  • 1 cup unsweetened almond milk or regular 2% milk
  • 2 teaspoon vanilla extract
  • 2 teaspoon real maple syrup can also use maple sugar, coconut sugar, or sugar-free syrup
  • ½ teaspoon cinnamon
  • dash nutmeg a dash goes a long way
  • 2 tablespoon nuts walnuts, pecans or almonds
  • 1 medium apple cored and chopped into bite-size pieces

Instructions

  • Mix together: oats, almond milk (or regular milk), vanilla, maple syrup, cinnamon, and nutmeg.
  • Divide the mixture between two mason jars or glass containers with a lid.
  • Top with nuts. Refrigerate oat mixture, covered, overnight.
  • Chop apple into bite-size pieces and place in a small glass microwaveable dish.
  • Cover and cook for 2-4 minutes until soft.
  • Add apples to oats and enjoy.
  • Drizzle with a little extra syrup and sprinkle with cinnamon, if desired.
