4 tbsp gluten-free all-purpose flour *King Arthur brand recommended 5 tbsp coconut sugar 3 tbsp cocoa powder 1/2 tsp baking powder pinch sea salt 3 tbsp unsweetened almond milk 3 tbsp melted butter or coconut oil, but the butter gives it a better flavor 1 tsp vanilla extract 1 egg slightly beaten 2 tbsp good quality dark chocolate chips
Whisk flour, coconut sugar, cocoa powder, baking powder and salt together in a small bowl.
In a separate bowl, stir together almond milk, melted butter, vanilla, and beaten egg.
Combine the two mixtures together in a large mixing bowl.
Divide evenly into two mugs. Top each mug with dark chocolate chips (60% cacao) and cover each mug with plastic wrap.
Microwave for 1-2 minutes. Microwave temps can vary. Cake should be gooey when done, but not runny.
