Barbecue meatloaf muffins stuffed to the gills with barbecue flavor, ground beef, quinoa, and lots of cheese.

- 1 lb lean ground beef such as sirloin
- 8 oz sharp cheddar freshly shredded
- 1 1/2 cups cooked quinoa
- 1/3 cup barbecue sauce your favorite kind
- 1 tsp paprika
- 1/2 tsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- dash cayenne pepper
- sea salt and pepper to taste
- Olive oil cooking spray
Preheat oven to 350 degrees F.
Combine all ingredients in a large bowl, using only half the cheddar
Mix well with your hands (don't be scared)
Spray 12 muffin tins with olive oil spray
Divide meat mixture, evenly, in all cups
Bake for 30 minutes, then top with remaining cheese and bake 5 minutes longer until cheese is bubbly and melted
