8ozboneless skinless chicken breastchopped into bite-size pieces
1/2tspgarlic salt
1/4tsppepper
1/4tspchili powder
2Thin crust flatbreadsI used the Flatout Rustic White Thin Pizza Crusts
4tbspbarbecue sauceI used Gourmet Warehouse brand, but go with your favorite brand
1/4cupred onionvery thinly sliced
3ozextra sharp cheddar cheeseshredded from the block
1tbspchopped fresh cilantro for garnish
Instructions
Preheat oven to 375 degrees F.
Heat the olive oil in a skillet over medium heat. Add the chopped chicken breast and cook until lightly golden on the outside and juices run clear turning over half way through, about 5 minutes.
Turn off the heat, season the chicken with the garlic salt, chili powder, and black pepper and toss to coat. Set aside while you prepare your flatbreads.
Place the flatbreads on a baking sheet sprayed lightly with non-stick spray and top each flatbread with 2 tablespoons of barbecue sauce.
Top with onions, cheese, and chicken and bake for 5-6 minutes, or until cheese is melted and bubbly.
Garnish with chopped fresh cilantro and serve immediately.
