Air Fryer Greek Potatoes

These Air Fryer Greek Potatoes are a modern take on a Mediterranean classic with crispy, fork-tender potatoes seasoned with olive oil, lemon, herbs, and spices topped with crumbled feta cheese.

Ingredients

  • 1 ½ lbs Baby Dutch yellow potatoes you can also use Yukon gold potatoes
  • 2 tablespoon olive oil
  • 1 teaspoon fresh lemon zest don't skip this!
  • 1 tsp dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup feta cheese crumbled
  • ½ tablespoon fresh dill finely chopped
  • ½ tablespoon fresh parsley finely chopped
  • lemon wedges for serving

Instructions

  • Preheat the air fryer to 400 degrees F. for 5 minutes.
  • Slice the potatoes into even 1 ½ inch pieces and place them in a medium-sized bowl.
  • In a small bowl, whisk together: olive oil, lemon zest, garlic powder, oregano, salt, and pepper.
  • Toss the olive oil mixture with the potatoes until evenly coated.
  • Place the potatoes in the air fryer basket, spreading them out for even cooking, and cook at 400 degrees F. for 10 minutes.
  • Shake the basket, and cook 5-8 minutes more until the potatoes are crispy on the outside and fork-tender.
  • Garnish with crumbled feta, fresh dill, and fresh parsley. Serve with lemon wedges and tzatziki sauce for dipping.

Notes

    • Chop potatoes evenly. Take your time cutting the potatoes into uniform 1½ inch chunks. This helps guarantee even cooking.
    • Preheat air fryer. This leads to crispier results because the exteriors start getting crispy the moment the potatoes make contact with the hot air fryer basket. 
    • Shake the basket. Be sure to shake the basket around the 10-minute mark. This helps prevent sticking and achieve evenly crisped, golden-brown exteriors. 
    • Refer to the user manual. The cooking time and temperature may vary depending on your air fryer model, so check the settings and ensure yours is adequately programmed for roasted baby potatoes. I tested this recipe with a Cosori air fryer. 
    • Serve immediately. Greek potatoes are best enjoyed right out of the air fryer while still hot and crispy.
