Green Goddess Juice

This delicious and refreshing green juice is packed with nutrients made with kale, spinach, celery, cucumber, grapes, apple, and ginger. Optional lime wedges for serving.

Equipment

  • 1 Juicer

Ingredients

  • 1 bunch kale
  • 1 cup spinach packed
  • 2 stalks celery
  • 1 cucumber
  • ½ cup seedless green grapes
  • 1 large green apple
  • 1 inch piece of ginger peeled
  • Optional: lime wedges for serving

Instructions

  • Wash the fruits and vegetables and pat dry.
  • Remove the hard stems from the kale and roughly chop.
  • Slice the celery and the cucumber in half.
  • Core the apple and slice it in half (or in quarters depending on your juicer).
  • Process the fruit and vegetables and divide the juice between two glasses.
  • Garnish with fresh lime for squeezing on top, if desired. Enjoy immediately.

Notes

  • It is best to drink cold-pressed juice right away, but you can get a head start by washing, drying, and cutting everything up to 3 days in advance and storing it in airtight containers in the fridge. To prevent the apples from turning brown, squeeze lemon juice over the top.
  • Both the cucumber peel and the green apple peel are packed in fiber, flavor, and vibrant green color, so it’s best to shoot them through the juicer with the peels left intact.
  • As with any cold-pressed juice or smoothie, you can mix and match fresh whole fruits to suit your tastes, but I wouldn’t recommend juicing entire citrus fruits, like lemon and lime, as the bitter rind may overpower the delicate flavors.
