Easy Classic Popovers Recipe

An airy and delicious easy baked roll recipe from my grandmother's vintage cookbook

  • 2 cups unbleached white wheat flour such as King Arthur brand
  • 2 cups whole milk
  • 2 eggs
  • 1 tsp butter melted
  • 1 tsp sea salt
  • 1 tsp vanilla


  • Preheat oven to 450 degrees.  Grease and flour a 12 cup muffin pan (I use Pam baking spray-it already has flour in it and so much easier!)  In a medium size bowl, beat eggs slightly.  Add all of the other ingredients to the eggs.  Beat until just smooth.  Do not over mix (very important). Fill 12 muffin cups evenly with batter. Bake at 450 degrees for 20 minutes.  Decrease oven temperature to 350 degrees and bake for 5-10 minutes more until popovers are puffed and set.  They should be lightly golden brown on top.  Immediately remove from pan and serve hot.
