Ingredients

  • 4 tablespoon gluten-free all-purpose flour *King Arthur brand recommended
  • 5 tablespoon coconut sugar
  • 3 tablespoon cocoa powder
  • ½ teaspoon baking powder
  • pinch sea salt
  • 3 tablespoon unsweetened almond milk 
  • 3 tablespoon melted butter or coconut oil, but the butter gives it a better flavor
  • 1 teaspoon vanilla extract
  • 1 egg slightly beaten
  • 2 tablespoon good quality dark chocolate chips

Instructions

  • Whisk flour, coconut sugar, cocoa powder, baking powder and salt together in a small bowl. 
  • In a separate bowl, stir together almond milk, melted butter, vanilla, and beaten egg.
  • Combine the two mixtures together in a large mixing bowl.
  • Divide evenly into two mugs.  Top each mug with dark chocolate chips (60% cacao) and cover each mug with plastic wrap.
  • Microwave for 1-2 minutes. Microwave temps can vary. Cake should be gooey when done, but not runny.
