Bacon-Wrapped Green Beans

A delicious and simple side dish made with fresh green beans and center-cut bacon glazed with a brown sugar dijon garlic butter.

Ingredients

  • 1 lb Fresh French green beans go for the long, thin beans (hericot verts)
  • 6 slices center-cut bacon sliced in half
  • ¼ cup butter melted
  • 3 tablespoon brown sugar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • ½ teaspoon pepper
  • 1 teaspoon coarse salt

Instructions

  • Preheat the oven to 400 degrees F.
  • In a large pot, add the beans and cover with water.
  • Bring to a boil and cook for 6 minutes.
  • Drain the beans and put them into an ice bath to stop the cooking process and cool.
  • Heat a non-stick skillet on medium heat and cook the bacon for 3-4 minutes, turning half way through.
  • Drain bacon on paper towels.
  • Drain the green beans and pat them dry with paper towels.
  • Line a baking sheet with parchment paper.
  • Wrap about 7 or 8 beans with a piece of bacon and secure the bundle with a toothpick. Repeat until all twelve bundles are assembled.
  • In a small bowl, whisk together the melted butter, brown sugar, Dijon, minced garlic, salt and pepper.
  • Using a pastry brush, baste each bundle with the glaze mixture, making sure to coat each bundle thoroughly.
  • Bake the green bean roll-ups for 15-18 minutes until the bacon is golden
