Barbecue Quinoa Beef & Cheddar Mini Meatloaves

Ingredients

  • 1 lb lean ground beef such as sirloin
  • 6-8 oz sharp cheddar freshly shredded (depending on how cheesy you like it)
  • 1 1/2 cups cooked quinoa
  • 1/3 cup barbecue sauce your favorite kind
  • 1 tsp paprika
  • 1/2 tsp chilli powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • dash cayenne pepper
  • sea salt and pepper to taste
  • Olive oil cooking spray

Instructions

  • Preheat oven to 350 degrees F.
  • Combine all ingredients in a large bowl, using only half the cheddar
  • Mix well with your hands (don't be scared)
  • Spray 12 muffin tins with olive oil spray
  • Divide meat mixture, evenly, in all cups
  • Bake for 30 minutes, then top with remaining cheese and bake 5 minutes longer until cheese is bubbly and melted
