Blueberry Chicken Salad
A lightened-up recipe for almond chicken salad made with fresh sweet summer blueberries, slivered almonds, sweet Vidalia onions, lemon juice, and light mayonnaise.

2 1/2 cups cooked chicken chopped 1 cup fresh blueberries 1/2 cup sliced almonds lightly toasted 1/2 cup finely sliced celery 1/4 cup finely chopped vidalia onion 1/2 cup light mayo or this recipe for homemade Paleo mayonnaise 1 tsp freshly squeezed lemon juice 1/2 tsp salt 1/4 tsp pepper
Whisk lemon juice, mayo, salt and pepper together in a medium size bowl.
Add all other ingredients and toss to coat.
Serve over a bed of artisan greens and baby spinach.
Garnish with extra toasted almonds, if desired
