Blueberry Almond Chicken Salad

Ingredients

  • 2 1/2 cups cooked chicken chopped
  • 1 cup fresh blueberries
  • 1/2 cup sliced almonds lightly toasted
  • 1/2 cup finely sliced celery
  • 1/4 cup finely chopped vidalia onion
  • 1/2 cup light mayo or this recipe for homemade Paleo mayonnaise
  • 1 tsp freshly squeezed lemon juice
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Whisk lemon juice, mayo, salt and pepper together in a medium size bowl.
  2. Add all other ingredients and toss to coat.
  3. Serve over a bed of artisan greens and baby spinach.
  4. Garnish with extra toasted almonds, if desired
