Slow Cooker Stuffed Acorn Squash

Ingredients

  • 2 Acorn Squash
  • 1/2 cup panko bread crumbs I used Ian's GF panko
  • 1/2 cup chopped pecans
  • 1/3 cup melted butter
  • 1/4 cup coconut sugar or maple sugar
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 3 tbsp freshly squeezed orange juice
  • 2 tbsp extra virgin olive oil

Instructions

  1. Rinse squash and pat dry
  2. Cut squash in half and scoop out the seeds
  3. Stir all remaining ingredients together, except olive oil and spoon into the center of the squash
  4. Arrange squash in the slow cooker and drizzle with olive oil
  5. Cook 5-6 hours on low, until squash is tender
