Heat a large sauté pan, then add olive oil and melt the butter. Add chopped onions and cook until they begin to soften. Add spinach and stir until wilted.
Pour spinach and onion mixture on top of the thawed pie crust and top with chopped ham. Then whisk egg, milk, and seasonings together until well blended.
Add the shredded cheese, then pour the egg mixture on top. Bake in a preheated oven for 40-50 minutes until center is set. Serve warm with fresh fruit.
