Rub potatoes lightly with oil, sprinkle with coarse salt, and prick several times with a fork.
Bake 40-60 minutes. About 10 minutes before they are done, pop the bacon in the oven. When done, crumble bacon, wrap potatoes in foil and keep warm in the oven.
Cook the ground beef and sausage until no longer pink. Drain, add the garlic and cook until soft. Then season with salt and pepper.
Arrange beef mixture, green onions, shredded cheese, butter, sour cream, and crumbled bacon in bowls and serve with the potatoes, buffet-style.
