Protein-Packed Cottage Cheese Pancakes make a nutritious gluten-free pancake option made with eggs, cottage cheese, flour, milk and olive oil.

  • 1 cup whole milk cottage cheese
  • 6 whole eggs
  • ½ cup gluten-free all purpose flour I use King Arthur Brand
  • ¼ teaspoon sea salt
  • ¼ cup whole milk
  • ½ teaspoon vanilla
  • 2 tablespoon extra virgin olive oil


  • Place all ingredients into a blender and blend at high speed for 1 minute.  Scrape sides of the blender and blend for a few more seconds until all is incorporated and smooth.  Bake on a greased griddle using ¼ cup batter for each small pancake or about ½ cup for each large crepe-like pancake.
