Jalapeno Scrambled Eggs with Pan-Fried Sweet Potatoes
Spicy scrambled eggs with cinnamon sweetened pan-fried sweet potatoes. A delicious, quick and easy breakfast for one!
- 1 small sweet potato skin removed, cooked and sliced
- 1 teaspoon cinnamon
- 2 teaspoon virgin coconut oil
- 1 teaspoon avocado oil
- 3 eggs beaten
- 1 small jalapeno finely diced
In a small frying pan, heat coconut oil over medium heat.
In another frying pan, heat avocado oil over medium heat. Place jalapenos in pan with the avocado oil and saute until softened. Add eggs and cook until no longer runny.
Sprinkle sliced sweet potatoes with cinnamon and cook in coconut oil about a minute each side or until lightly browned.
