Spicy scrambled eggs with cinnamon sweetened pan-fried sweet potatoes. A delicious, quick and easy breakfast for one!

  • 1 small sweet potato skin removed, cooked and sliced
  • 1 teaspoon cinnamon
  • 2 teaspoon virgin coconut oil
  • 1 teaspoon avocado oil
  • 3 eggs beaten
  • 1 small jalapeno finely diced


  • In a small frying pan, heat coconut oil over medium heat.  
  • In another frying pan, heat avocado oil over medium heat.  Place jalapenos in pan with the avocado oil and saute until softened.  Add eggs and cook until no longer runny.
  • Sprinkle sliced sweet potatoes with cinnamon and cook in coconut oil about a minute each side or until lightly browned.
