Ingredients

  • ½ cup grated parmesan cheese
  • ¼ cup whole wheat bread crumbs such as 4C brand
  • ¼ cup Ian's whole wheat panko bread crumbs
  • ¼ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon dried or fresh parsley finely chopped
  • 6 boneless skinless thin chicken breasts 4 oz each
  • 4 tablespoon smart balance butter the olive oil blend sticks

Instructions

  • Preheat oven to 400 degrees. Melt butter in the microwave for about 30 seconds or until completely melted.
  • Mix all dry ingredients together in a bowl.
  • One at a time, dip chicken breasts in melted butter and then coat with breading.
  • Place on a baking sheet covered with parchment paper.
  • Cook for 12 minutes on one side then turn and cook an additional 12-15 minutes on the other. Cooking time will vary depending on the thickness of the chicken breasts.
