A flavorful recipe for breakfast pancakes made with ricotta cheese, unbleached flour, eggs, milk, and fresh citrus zest

- 15 oz ricotta cheese
- 1 ½ cups unbleached all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 4 eggs
- 1 ½ cups whole milk
- 2 teaspoon vanilla
- 1 teaspoon fresh lemon or orange zest
- dash salt
Mix all ingredients in a large bowl until smooth
Let it sit for a few minutes while you heat up your pan to med-high heat
Spray with olive oil cooking spray or coconut oil and drop pancakes by ¼ cup size onto hot griddle
Flip when mixture is bubbling
Serve with fresh fruit, pure maple syrup or your favorite jam
