Ingredients

  • 15 oz ricotta cheese
  • 1 ½ cups unbleached all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 4 eggs
  • 1 ½ cups whole milk
  • 2 teaspoon vanilla
  • 1 teaspoon fresh lemon or orange zest
  • dash salt

Instructions

  • Mix all ingredients in a large bowl until smooth
  • Let it sit for a few minutes while you heat up your pan to med-high heat
  • Spray with olive oil cooking spray or coconut oil and drop pancakes by ¼ cup size onto hot griddle
  • Flip when mixture is bubbling
  • Serve with fresh fruit, pure maple syrup or your favorite jam
