Blueberry Pineapple Salad
This Blueberry Pineapple Salad is the perfect sweet and savory summertime salad made with Greek yogurt, pineapple, fresh blueberries, and toasted walnuts.
- 4 cups fresh blueberries
- 1 cup fresh pineapple chopped
- ¼ cup very finely diced celery
- 4 oz cream cheese
- ½ cup plain Greek yogurt
- ¼ cup toasted walnuts chopped (can also use slivered almonds)
- 1 tsp fresh lemon zest
- 1 tsp lemon juice
- 1 tsp vanilla extract
- 2-3 tbsp honey
- *1 tsp fresh lemon thyme and more for garnish optional
Blend yogurt, cream cheese, honey, lemon zest, lemon juice, honey, lemon thyme (if using) and vanilla in the bowl of an electric mixer until smooth and creamy
Stir in remaining ingredients and garnish with a sprig of lemon thyme, if desired.
Cover and chill until ready to serve.
