Pink Lady Mocktail

A booze-free version of the classic Pink Lady cocktai made with apple cider, lemon juice, grenadine, pasteurized egg whites, and sparkling mineral water. Refreshing and delicious!

Equipment

  • 1 cocktail shaker

Ingredients

  • 2 oz apple cider
  • 1 ½ oz fresh lemon juice
  • ¾ oz grenadine
  • 6 tablespoon pasteurized liquid egg whites in the carton
  • ice
  • 2 oz sparkling mineral water
  • 2 cherries for garnish

Instructions

  • Add the first four ingredients into a shaker and vigorously dry-shake (without ice).
  • Add ice and shake until well chilled.
  • Pour the sparkling mineral water into 2 cocktail glasses (1 oz in each glass).
  • Strain the mixture into each glass.
  • Garnish with a cherry and serve.

Notes

  • Shake vigorously. You must shake the ingredients vigorously in a cocktail shaker, first without ice to emulsify the egg whites and then again with ice to chill the liquid. This will help create a frothy consistency and foam on top. 
  • Adjust sweetness. After shaking it with ice, give it a taste, and adjust the sweetness to your liking with more grenadine. If it’s too sweet, add more sparking water to dilute the flavor. 
  • Consider double-straining. If you prefer a smoother texture without pulp or ice shards, strain the mocktail a second time using a fine-mesh strainer while pouring it into the glass.
