Light Peanut Butter Mousse

Ingredients

  • ½ cup peanut butter creamy, no-stir, peanut butter
  • 8 oz Mascarpone cheese you can also use low-fat cream cheese to reduce the calories and fat content
  • ½ tsp vanilla extract
  • ½ cup powdered sugar you can even reduce this to ⅓ cup if you like it less sweet
  • 8 oz sugar-free Cool whip or Truwhip for a healthier option

Instructions

  • In a mixing bowl, combine the peanut butter, Mascarpone cheese, and vanilla extract.
  • Beat until smooth, about 1 minute.
  • Add the powdered sugar and beat until well incorporated, stirring down the sides until blended.
  • Gently fold in the whipped topping until smooth.
  • Spoon into parfait glasses, or use a pastry bag and a large decorating tip to swirl it into dessert glasses.
  • Serve immediately, or cover and chill until ready to serve.

Notes

*It’s important to make sure you’re using no-stir natural peanut butter for this recipe that does not contain sugar as it can throw off the texture and level of sweetness. 
*To make sugar-free peanut butter mousse. Use sugar-free cool whip and replace the powdered sugar with Swerve Powdered Sugar or Powdered Monkfruit Sweetener. Taste as you go, as the level of sweetness is different when compared to traditional powdered sugar. These ingredient swaps make this dessert suitable for a keto or low-carb lifestyle.
